Jalapeño Cheesy Stuffed Mushrooms

What You’ll Need:

  • 4ml Unflavored CBD Oil
  • 1lb (16oz) White Button Mushrooms
  • 2 Scallions
  • 1 Jalapeño
  • 4oz Cream Cheese (softened)
  • ¼ Cup Sharp Cheddar Cheese (shredded)
  • ½ Tsp. Smoked Paprika
  • 1 Pinch Salt
  • Cooking Oil Spray

How to Make:

  1. Preheat your oven to 425°F.
  2. Clean your mushrooms with a damp paper towel, removing all stems. This should create a pocket within each mushroom where you will add your filling. If a mushroom doesn’t have enough of a pocket to hold a filling, make one using a spoon and applying only minimal pressure.
  3. Finely mince your scallions and jalapeños.
  4. In a medium-sized bowl, combine your minced scallions and jalepeños, softened cream cheese, shredded sharp cheddar, paprika, salt, and unflavored CBD oil. Stir gently until all ingredients are evenly combined.
  5. With a spoon, scoop a small portion of your mixed stuffing into the pocket of each mushroom.
  6. Lightly spray a baking sheet with your cooking oil spray, placing mushrooms on the baking sheet about 1 inch apart.
  7. Bake for 20 minutes. If you want the outside of your mushrooms to be crispier, you can take them out after about 10 minutes and lightly spray them with your cooking oil spray before putting them back in the oven for the remaining 10 minutes.

Zesty 7-Layer Taco Dip

What You’ll Need:

  • 6ml Lime-Flavored CBD Oil (use unflavored CBD oil if lime is unavailable)
  • 1oz Taco Seasoning Mix
  • 16oz Refried Beans
  • 8oz Cream Cheese (softened)
  • 16oz Sour Cream
  • 16oz Preferred Salsa
  • 1 Large Tomato
  • 1 Green Bell Pepper
  • 1 Bunch Green Onions
  • 1 Head Iceberg Lettuce
  • ½ Cup Black Olives (pitted, sliced)
  • 2 Cups Cheddar Cheese (shredded)

How to Make:

  1. Preheat your oven to 400°F.
  2. Heat your refried beans in a pot or a pan, cooking on low. Gently stir your taco seasoning mix into the refried beans as they’re cooking.
  3. When refried beans are warm to the touch, spread the mixture into a medium-sized 1-inch baking dish.
  4. In a medium bowl, mix your lime-flavored CBD oil, cream cheese, and sour cream. Stir until all ingredients are evenly mixed.
  5. Spread this mixture atop your refried beans in an even layer.
  6. Take your preferred variety of salsa and spread it in an even layer atop the CBD cream cheese mixture.
  7. Chop your tomato, green bell pepper, green onions, and lettuce. Combine these ingredients in a medium-sized bowl and stir until evenly mixed.
  8. Take your chopped vegetable mix and spread it atop your salsa in an even layer.
  9. Take your shredded cheddar cheese and spread it atop your vegetables in an even layer.
  10. Take your sliced black olives and garnish in an even layer atop your cheese.
  11. Place the baking dish in the oven for about 5 minutes, until the cheese is melted.

  • 1lb Chicken Breast (skinless, boneless)
  • 1 Cup Carrots
  • 1 Cup Green Peas
  • ½ Cup Celery
  • ⅓ Cup Butter
  • ⅓ Cup Onion
  • ⅓ Cup All-Purpose Flour
  • ½ Tsp. Salt
  • ¼ Tsp. Black Pepper
  • ¼ Tsp. Celery Seed
  • 1¾ Cup Chicken Broth
  • ⅔ Cup Whole Milk
  • 2 Unbaked Pie Crusts

How to Make:

  1. Preheat your oven to 425°F.
  2. Cut your chicken breast into cubes.
  3. Chop your carrots, celery, and onion.
  4. In a saucepan over medium heat, add 1 Tbsp. of cooking oil before adding your cubed chicken breast, chopped celery, chopped carrots, and green peas. Add water until ingredients are covered and boil for 15 minutes. Remove from heat, drain excess liquid, and stir in your unflavored CBD oil before setting aside.
  5. In another saucepan over medium heat, add your butter and chopped onions. Cook onions until they appear soft and translucent. Stir in your flour, salt, black pepper, and celery seed until evenly mixed. Next, slowly stir in your chicken broth and milk. Cook until the mixture becomes thick. Remove from heat and set aside.
  6. Place your chicken mixture in the bottom of an unbaked pie crust.
  7. Add your broth mixture atop the chicken mixture.
  8. Seal your pie with the other unbaked pie crust. Cut away the excess dough and, using a knife, make several small slits in the top of the pie.
  9. Bake your pie for 30 minutes. Make sure the pie crust is golden brown and the filling is bubbly. Let cool for 10 minutes before serving.

This recipe makes about 8 servings.

CBD-Infused Curried Coconut Beef

What You’ll Need:

  • 4ml Unflavored CBD Oil
  • 2lbs Preferred Cut of Beef
  • 2 Tbsp. Curry Powder
  • 1 Tsp. Salt
  • 1 Tsp. Black Pepper
  • ½ Onion
  • 2 Clove of Garlic
  • 14oz Stewed Tomatoes (diced)
  • 1½ Tbsp. Cooking Oil
  • 14oz Coconut Milk
  • 8oz Tomato Sauce
  • 3 Tbsp. Sugar

How to Make:

  1. Cut your beef into ½ inch chunks and toss with salt and black pepper.
  2. Thinly slice your onion and crush your garlic.
  3. In a large skillet over medium-high heat, heat your cooking oil and curry powder for 2 minutes. Stir in onions and garlic and cook for another minute. Next, add beef and toss lightly until coated with the curry powder.
  4. Reduce heat to medium and cook for 7 to 10 minutes.
  5. Pour unflavored CBD oil, coconut milk, stewed tomatoes, tomato sauce, and sugar into the skillet. Stir to combine.
  6. Cover your skillet and cook for about 35 minutes, stirring occasionally.

CBD-Infused Boccone Dolce

Boccone Dolce is an Italian meringue dish garnished with sweet cream, chocolate ganache, and fresh fruit, offering an airy, delicate, and delicious end to your hearty main course. Adding CBD to this quarantine recipe only ups the ante. While this recipe may seem overwhelming at first, it’s easy to master and rewarding to complete. Let’s get started!

What You’ll Need:

  • 6ml Unflavored CBD Oil
  • 6 Large Egg White (bring to room temperature)
  • ¾ Cup White Granulated Sugar
  • ½ Tsp Cream of Tartar
  • 1 Tsp Vanilla Extract
  • 1½ Cups Semi-Sweet Chocolate Chips (or CBD-infused chocolate!)
  • 2 Cups Whipped Cream
  • ½ Cup Heavy Cream
  • 3 Cups Fresh Strawberries
  • 2 Kiwis
  • 2 Cups Fresh Raspberries
  • 1 Cup Fresh Blueberries
  • 1 Banana

How to Make:

  1. Preheat your oven to 200°F.
  2. Line a large baking sheet with parchment paper. With a pencil, trace 3 circles that are about 8 inches across.
  3. In a large bowl, add your unflavored CBD oil, egg whites, white granulated sugar, vanilla extract, and cream of tartar. Whisk hard. If using an electric mixer, whisk on high. The mixture should become very thick and somewhat glossy.
  4. Transfer this mixer to a pastry bag. If you do not have access to a pastry bag, transfer mixture to a ziplock bag and cut one of the corners off the bag, allowing the mixture to squeeze through.
  5. Using your pastry bag, squeeze the mixture in a 1-inch-thick path along the circles you traced earlier. After tracing the outer circle, continue to fill the circle one layer at a time until you have a patty. Smooth the top of this patty with a spatula.
  6. Gently lift your parchment paper from atop your baking sheet and place directly onto your oven rack. Just to reiterate: the baking sheet will not go in the oven, only the parchment paper with the unbaked meringues on top.
  7. Bake for 2 hours and 45 minutes. Once finished, turn off the oven but do not remove meringues. Instead, let them sit inside the oven until crisp, about 5 minutes.
  8. While the meringues are baking, add your heavy cream to a pot over medium-high heat. Wait until the cream becomes hot, not boiling. Add your chocolate chips and whisk until smooth, creating your chocolate ganache.
  9. Cut your strawberries in half, and slice your kiwis and banana into bite-sized pieces.
  10. Once the meringues are done baking and have crisped, remove them from the oven. Take one layer of meringue and drizzle it with chocolate ganache and fresh fruit. Add another layer of meringue and repeat until a cake is formed.

This recipe makes about 12 servings. Boccone Dolce is best served within an hour of preparation as that is when the meringues are most airy, delicate, and crisp.
